A no-bake cheesecake with a fruit topping, served chilled.
Ingredients

- 1 cup graham cracker crumbs
- 2 tablespoons melted butter
- 8 ounces cream cheese, softened
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/4 cup lemon juice
- 1 cup heavy cream, whipped
- 1 cup mixed berries (strawberries, blueberries, raspberries)
Instructions
- Mix graham cracker crumbs and melted butter. Press into the bottom of a pie plate.
- Beat cream cheese and sugar until smooth.
- Stir in vanilla extract and lemon juice.
- Gently fold in whipped cream.
- Pour cream cheese mixture over the crust.
- Top with mixed berries.
- Chill for at least 4 hours before serving.
Notes
- For a firmer cheesecake, chill for 6 hours or overnight.
- You can use other fruits like peaches or cherries.
- Garnish with a sprig of mint if desired.
