Instructions
- In a medium bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, minced garlic, and grated ginger.
- In a small bowl, whisk together cornstarch and water to create a slurry.
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add chicken pieces and cook until browned on all sides and cooked through.
- Pour the honey sauce over the chicken and stir to coat.
- Bring the sauce to a simmer, then stir in the cornstarch slurry.
- Cook, stirring constantly, until the sauce thickens.
- Remove from heat and stir in sliced green onions.
- Serve hot over rice and garnish with sesame seeds if desired.

- Adjust the amount of honey and soy sauce to your preference.
- For a spicier kick, add a pinch of red pepper flakes to the sauce.
