Description
A creamy and comforting soup inspired by the classic Chicken Cordon Bleu dish.
Ingredients

- 2 tablespoons butter
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 2 cups cooked chicken, shredded or diced
- 1 cup cooked ham, diced
- 1/2 cup all-purpose flour
- 2 cups milk
- 1 cup heavy cream
- 1 cup shredded Swiss cheese
- Salt and pepper to taste
- Optional: Croutons or fresh parsley for garnish
Instructions
- Melt butter in a large pot or Dutch oven over medium heat.
- Add onion and cook until softened, about 5 minutes.
- Stir in garlic and cook for 1 minute more.
- Whisk in flour and cook for 1-2 minutes, stirring constantly, until a paste forms.
- Gradually whisk in chicken broth, stirring until smooth.
- Bring to a simmer, then reduce heat and cook for 5-10 minutes, stirring occasionally, until slightly thickened.
- Stir in milk and heavy cream. Heat through, but do not boil.
- Add cooked chicken and ham to the soup.
- Stir in Swiss cheese until melted and smooth.
- Season with salt and pepper to taste.
- Serve hot, garnished with croutons or parsley if desired.
Notes
- You can use leftover cooked chicken or rotisserie chicken.
- Adjust the thickness of the soup by adding more or less milk or broth.
- For a richer soup, use half-and-half instead of milk.
