- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 teaspoon Cajun seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 8 ounces rotini pasta
- 1/4 cup chopped fresh parsley
Instructions
- Season chicken pieces with Cajun seasoning, salt, and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken to the skillet and cook until browned on all sides and cooked through. Remove chicken from skillet and set aside.
- Add minced garlic to the skillet and cook for about 30 seconds until fragrant.
- Pour in chicken broth and heavy cream. Bring to a simmer, stirring occasionally.
- Stir in Parmesan cheese until melted and the sauce is smooth.
- Add rotini pasta to the skillet. Cover and cook for 10-12 minutes, or until pasta is al dente, stirring occasionally.
- Return the cooked chicken to the skillet. Stir to combine.
- Garnish with fresh parsley before serving.
