Ingredients

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1/4 teaspoon dried thyme
  • 1/2 cup beef broth
  • 1 (10.75 ounce) can condensed tomato soup
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup cooked rice

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In a large skillet, brown the ground beef with the onion and garlic. Drain off any excess grease.
  3. Stir in salt, pepper, paprika, and thyme.
  4. Add beef broth and tomato soup. Bring to a simmer and cook for 5 minutes, stirring occasionally.
  5. Stir in cooked rice.
  6. Pour half of the mixture into a 9×13 inch baking dish.
  7. Sprinkle half of the cheddar and Monterey Jack cheese over the beef mixture.
  8. Top with the remaining beef mixture and the remaining cheese.
  9. Bake for 20-25 minutes, or until the cheese is melted and bubbly.
  10. Let stand for 5 minutes before serving.

Notes

  • For a spicier casserole, add a pinch of red pepper flakes.
  • You can substitute the rice with cooked egg noodles.
  • Add a layer of sliced tomatoes on top of the cheese for extra flavor.
