- 2 tablespoons olive oil

- 2 cups chicken broth

- 2 cloves garlic, minced
- 1 teaspoon dried thyme

Instructions
- In a small bowl, combine 1 teaspoon salt, 1/2 teaspoon black pepper, 1 teaspoon dried thyme, 1/2 teaspoon dried oregano, and 1/4 teaspoon cayenne pepper.
- Pat the chicken thighs dry and rub them generously with the spice mixture.
- Heat olive oil in a large skillet or Dutch oven over medium-high heat. Sear the chicken until browned on both sides, about 3-4 minutes per side. Remove chicken from the skillet and set aside.
- Add the chopped onion, celery, and green bell pepper to the skillet. Cook, stirring occasionally, until softened, about 5-7 minutes.
- Stir in the minced garlic and cook for 1 minute more until fragrant.
- Sprinkle the flour over the vegetables and stir constantly for 2 minutes to create a roux.
- Gradually whisk in the chicken broth, stirring to prevent lumps. Bring the mixture to a simmer, stirring until the gravy thickens.
- Return the seared chicken to the skillet. Reduce heat to low, cover, and simmer for 20-25 minutes, or until the chicken is cooked through and tender.
- Taste and adjust seasoning with salt and pepper as needed.
- Serve hot over cooked rice or mashed potatoes.

- For a spicier gravy, add more cayenne pepper.
