Ingredients

  • 2 lobster tails (about 68 oz each)
  • 1 cup unsalted butter
  • 2 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Pat the lobster tails dry with paper towels.
  2. Using kitchen shears, cut along the top of the lobster shell, exposing the meat. Gently lift the meat out and place it on top of the shell.
  3. In a medium saucepan, melt the butter over low heat.
  4. Add the minced garlic, salt, and pepper to the melted butter. Stir to combine.
  5. Place the lobster tails, meat-side up, into the saucepan with the butter.
  6. Ensure the butter covers most of the lobster meat.
  7. Poach the lobster tails gently in the butter for 5-7 minutes, or until the meat is opaque and cooked through. Baste occasionally with the butter.
  8. Remove the lobster tails from the butter.
  9. Drizzle with fresh lemon juice.
  10. Garnish with chopped fresh parsley before serving.

  • Do not overcook the lobster, as it can become tough.
  • You can add other aromatics like thyme sprigs or a bay leaf to the butter while poaching.
