Description
A delightful Boston Cream Poke Cake featuring a moist vanilla cake soaked in a rich custard and topped with a smooth chocolate ganache.

- 1 (18.25 ounce) package yellow cake mix
- 3 cups milk
- 1/2 cup granulated sugar
- 1/4 cup cornstarch
- 4 egg yolks
- 2 tablespoons butter
- 1 teaspoon vanilla extract
- 1 cup powdered sugar
- 1/4 cup heavy cream
- 1/4 cup chocolate chips
Instructions
- Prepare cake mix according to package directions for a 9×13 inch pan. Bake and let cool completely.
- While the cake cools, prepare the custard. In a saucepan, whisk together milk, granulated sugar, and cornstarch.
- Cook over medium heat, stirring constantly, until thickened.
- In a small bowl, whisk the egg yolks. Temper the egg yolks by gradually whisking about 1/2 cup of the hot milk mixture into them.
- Pour the tempered egg yolk mixture back into the saucepan. Cook for 2 more minutes, stirring constantly.
- Remove from heat and stir in butter and vanilla extract until smooth.
- Pour the warm custard evenly over the cooled cake. Chill for at least 2 hours.
- For the ganache, heat heavy cream in a small saucepan until simmering.
- Pour hot cream over chocolate chips in a bowl. Let stand for 5 minutes, then whisk until smooth.
- Spread the chocolate ganache over the chilled custard.
- Chill for another 30 minutes before serving.
Notes
- Ensure the cake is completely cool before adding the custard.
- For a firmer custard, cook it a bit longer.
- The ganache can be made ahead of time and gently reheated if it becomes too firm.
