  • 1 cup mashed ripe bananas (about 2 medium)
  • 1/2 cup sour cream
  • For the Swirl:
  • 1/2 cup packed brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a medium bowl, whisk together flour, baking soda, and salt.
  3. In a large bowl, cream together softened butter and granulated sugar until light and fluffy.
  4. Beat in eggs one at a time, then stir in vanilla extract.
  5. In a small bowl, whisk together mashed bananas and sour cream.
  6. Add the dry ingredients to the wet ingredients alternately with the banana mixture, beginning and ending with the dry ingredients. Mix until just combined.
  7. In a small bowl, combine brown sugar, cinnamon, and nutmeg for the swirl.
  8. Pour half of the batter into the prepared cake pan. Sprinkle half of the brown sugar mixture over the batter.
  9. Dollop the remaining batter over the brown sugar layer. Sprinkle the remaining brown sugar mixture on top.
  10. Gently swirl the top with a knife or skewer.
  11. Bake for 40-50 minutes, or until a wooden skewer inserted into the center comes out clean.
  12. Let cool in the pan for 10 minutes before inverting onto a wire rack to cool completely.
