- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup mashed ripe bananas (about 2 medium)
- 1/2 cup sour cream
- For the Swirl:
- 1/2 cup packed brown sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a medium bowl, whisk together flour, baking soda, and salt.
- In a large bowl, cream together softened butter and granulated sugar until light and fluffy.
- Beat in eggs one at a time, then stir in vanilla extract.
- In a small bowl, whisk together mashed bananas and sour cream.
- Add the dry ingredients to the wet ingredients alternately with the banana mixture, beginning and ending with the dry ingredients. Mix until just combined.
- In a small bowl, combine brown sugar, cinnamon, and nutmeg for the swirl.
- Pour half of the batter into the prepared cake pan. Sprinkle half of the brown sugar mixture over the batter.
- Dollop the remaining batter over the brown sugar layer. Sprinkle the remaining brown sugar mixture on top.
- Gently swirl the top with a knife or skewer.
- Bake for 40-50 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let cool in the pan for 10 minutes before inverting onto a wire rack to cool completely.

- Use very ripe bananas for the best flavor and sweetness.
- Ensure your butter and eggs are at room temperature for optimal batter consistency.
